3 INGREDIENT BUTTERSCOTCH ICEBOX COOKIES


This is probably one of the most common cookies around, but in my four decades of life and eating at countless church potluck meals, I've never had one until last month!  My friend made these super easy, super yummy cookies on our ski trip, and today, in honor of our last day before Spring Break starts, I'm sharing them with you!  Just in case you need something to keep little hands busy, they will love helping make these!


Here's what you need:


1 bag butterscotch chips
peanut butter (about a cup)
corn flakes (about 7 cups)

I know, the measurements aren't very exact.  When I asked my friend about it she was like,  "Oh, a couple of big spoonfuls of peanut butter and stir in the cornflakes until it looks right...".  So, you can't really mess these up and I'm guessing on the measurements.  You can adjust to your taste if needed.

First, pour the entire bag of chips into a microwave safe bowl.  Add a few big dallops of peanut butter.  I couldn't come up with a better word than "dallops"-but you know what I mean, right?  If you have a "melt chocolate" feature, use it.  If not, just warm the chips up good, but they should still be keeping their shape.  The peanut butter will be runny.  Then, stir for a minute or two until they are melted.


Now, pour in the cornflakes and mix well.  Line a cookie sheet with a piece of waxed or parchment paper (I give it a quick spray of Pam just for fun) and dip your cookies out.  You can use a spoon, a big scoop, or the 1/4 measuring cup works great for us.


Then, to make it even easier, when that layer is full I layer another sheet of paper on top and scoop out more cookies.  Depending on the size of your scoops, this will make about 18-24 cookies.

After your cookies are all scooped out, put in them in the refrigerator to cool until the butterscotch hardens back up.  We actually like ours in the freezer...they're ready to eat faster!  After they harden if there are any left, keep them stored in the fridge or freezer until ready to eat.  Betcha can't eat just one!


There are probably lots of variations of this recipe, including substituting crunchy Chinese noodles for the cornflakes.  I thought it would be fun to stir in a few mini chocolate chips at the end, too.  Or, see what creations the kids come up with! Gummy bears?  Nuts?  Sprinkles?  The sky is the limit!

How have I missed out on these my whole life?  I'm sheltered.

  1. You my friend are a troublemaker….because now I have to go make these! Although I don't have any Corn Flakes, but have massive amounts of Rice Krispies (husband always buys en masse!)….I wonder if they would work?   3. I think these are a variation of "Haystacks" ~ at least, I think so. :) I used to make them when my kids were young and have totally forgotten about them. So easy! Thanks for the reminder ~

  5. I really must live under a rock, because I have never heard of these, and I absolutely loved corn flakes as a child, so this is going on my to do list, sooner rather than later I believe!
